Zucchini Slice



ZUCCHINI SLICE


Makes 15 pieces


YOU WILL NEED: • 20 x 30 cm lamington pan • frying pan • grater • large bowl • medium bowl • wooden spoon • whisk • Oven heated to 170°C.


3 rashers rindless bacon, chopped
1 large onion or 2 leeks, chopped
450 grams zucchini, ends removed
Salt and pepper
1 cup grated tasty cheese
5 eggs
1 cup self-raising flour
1/3 cup sunflower oil


Directions

Grease the lamington pan and line the bottom of the pan with baking paper.

Heat one tablespoon of the oil in a frying pan over a medium heat and fry bacon for 2 minutes. Reduce heat and add onion or leeks. Cook until onion or leeks are soft but not browned. Turn off heat. Put bacon into a large bowl.

Grate zucchini and squeeze out moisture. Add zucchini to the bacon and onion. Add grated cheese to the zucchini mixture. Sprinkle mixture lightly with salt and pepper.

Add flour to the other ingredients in the large bowl and mix well with a wooden spoon.

Break eggs into a medium mixing bowl. Add remaining oil and beat together with a whisk until smooth. Add beaten eggs to the other ingredients in the large bowl and mix well with the wooden spoon.

Spread the mixture evenly in the lamington pan. Place pan on the middle rack in the oven and bake until the slice is firm and golden brown on top (about 40 minutes).

Allow to stand for at least 5 minutes before cutting into 15 even slices. This slice can be served hot or cold.
